Ricotta! Those who tasted our ricotta over the holidays know that it is the softest, creamiest, most perfect vegan ricotta ever. EVER. It is perfect for eating as-is on toast, on salads, you can mix into pastas, you can cook with it. Use it like you would regular dairy ricotta.
A 2-week aging yields a mild, "milky' in flavor cheese with a slight saltiness.
If you have had ricotta before, this is as close to it as we can get. Think soft, moist, spoonable.
