Kept moist and creamy, crumbly inside an ever-so-soft rind, our Reserve Cheddar is an 18-month-aged cheese that is buttery and embodies a mature nuttiness. Sweet, creamy, mild tang (it's matured a year and a half, so it's a gorgeous snacking cheese). You can shave/grate it over freshly roasted vegetables, potatoes, pasta, or snack on it with some crunchy pickles with hearty crackers. You can even shave it on a salad for a delicious, deep flavor!
With buttery notes and a nutty finish thanks to toasted amaranth and hemp hearts, Reserve Aged Cheddar is very snackable.
Wrapped in linen and rubbed with cocoa butter before aging.

**Cheddaring cheese is a multi-step process.
Our curds are formed into planks, stacked on top of each other, and weighed down to release excess liquid. As they chill, the planks are rotated so each gets the benefit of being at the bottom of the pile. After resting, the curd planks get processed into smaller pieces and formed into the forms they will cure into to create a drier, robust cheese**
