Diane created this one with a simple wish: a beautiful cheese special enough for a solo night in, yet equally at home with friends who love a good glass of red. Reminiscent of both Parmesan and aged cheddar, it's made only twice a year — Christmas and Christmas in July. When it's gone, it's gone until the next season.
During aging, these wheels are soaked in merlot, and the wine works its way into the rind, where rich, fruity notes are most pronounced. Slice in, and you'll find a striking two-toned wheel — creamy ivory, deep merlot-purple — with berry and plum flavor fading into a nutty, savory finish.
Cured slowly in small batches from our signature housemade vegetable-based cheese base, it's got that signature crumbly-yet-creamy texture — perfect for slicing thick, breaking into shards, or shaving over a salad. And like everything we make, it's 100% vegan, dairy-free, gluten-free, allergen-free.
How to enjoy it: Solo, with a good book and a glass of red. Or shared, on a board with candied walnuts and dried figs. On a salad, and we've had customers shave some on their burgers!
