This cheese is creamy, chewy, tastes just like cheese, and traditionally is one we crisp up on the griddle, grill, skillet for the most amazing experience. It is not a melty cheese or crumbly. Sear it and add to salads, cube on to soups, breakfast sandwiches, as part of your main or do what we do at the bakery: sear and set the plate out for everyone to eat because it is the best ever. It's my (Diane) greatest joy.
Our baker Theresa likes it griddled with a drizzle of honey or maple. MERCY!
It ages in fig leaves from our bakery tree. A cross of textures between Colombian quesito, halloumi, paneer, and aged queso fresco.

pepitas, hemp seeds, water, sea salt, lemon, nutritional yeast, 1/8 tsp avocado oil, celeriac, turnip, yuca, tapioca, cocoa butter, apple cider vinegar, hemp seed milk (housemade)
