This pepper jack is a true jack (or as close as I can get to it with it being vegan) which means it is perfect for melting over nachos, quesadillas, or a burger. It also makes a great snack when paired with sea salt crackers. During its 15 days of aging, it comes together to evenly balance its sweet flavor with the crunchy savoriness. If you are a fan of anything extra melted, this is the cheese for you. Oh, and it is not spicy at all. It is perfect.
